            Such an awesome, healthy and yummy way to start the day. These keep you going for hours and totally satisfy that kid in you that wants pikelets on a cold morning.

            Chia seeds totally qualify for ‘superfood’ status with their amazing nutrient, fibre, protein, Omega-3 and antioxidant profile. “Chia” is actually the ancient Mayan word for “strength.”

            Maca (another superfood) is great for hormonal function, boosts libido, mental function and energy. It’s rich in amino acids, vitamins and enzymes

            Banana & Chia Paleo Pikelets Recipe

            Ingredients

            • 1/2 banana
            • 1 egg
            • 2 Tbsp coconut flour
            • 1 Tbsp chia seeds
            • 1 tsp maca powder
            • 1 tsp psyllium
            • 1/2 tsp baking powder
            • zest of 1 lemon

            Method

            Blend ingredients and pour, pikelet-sized into a buttered or coconut-oiled frying pan. Bigger pancake-sizes are hard to flip and keep intact. I enjoy them just as they are, but you could add coconut yoghurt, butter or any topping of choice.
