            Carotoot (Carrot and Beetroot) Paleo Crackers

            These crackers are a great way to use up the pulp left over from juicing. The crackers are perfect with hummus or simply by themselves. Warning: moreish!

            Carotoot (Carrot and Beetroot) Paleo Crackers Recipe

            Ingredients

            • Pulp from 2 carrots
            • Pulp from 1 beetroot
            • sesame seeds
            • 1/2 tsp garlic powder
            • 1 tsp arrowroot
            • salt

            Method

            Mix all ingredients except salt and pour out onto baking paper. Cover with a second piece of baking paper and roll evenly with a rolling pin until it’s about 2-4mm thick. Remove top sheet and sprinkle with salt.  Bake in medium oven for 10 mins. Remove from oven a score lines with a sharp knife, returning to oven for a final 10 mins (keep checking) until crisp.
