            These Paleo breakfast (or lunch) fritters are so satisfying and a great vegetable-hit to start the day. Perfect for using up last nights stir-fry or salad. With a few small changes, you could have a different flavour every morning for a week. Try a Mediterranean version with olives, sundried tomatoes and garlic. Or add ginger, lemongrass and chilli for an Asian twist.

            Easy Paleo Breakfast Fritters Recipe

            Ingredients

            • 1 egg
            • 1/2 small courgette grated
            • 1/4 cup grated kumara, grated
            • 1 spring onion, chopped
            • 15g smoked salmon (optional)
            • 1/4 small capsicum, chopped
            • handful chopped parsley
            • zest of a lemon
            • 1 tsp tapioca, arrowroot or similar grain-free flour
            • salt, pepper

            Method

            You can use any vegetables for this. Last nights left-over stir-fry works great. Just whisk an egg and mix through your chopped vegetables and a dash of tapioca flour (or similar) to bind. Fry with butter or coconut oil for 1 minute either side. Enjoy!
