            Is there such a thing a decent sugar-free chocolate?

            The big question….is there such a thing a decent sugar-free chocolate? And by decent I mean

            • Tastes yummy
            • Isn’t sweetened with aspartame, maltitol or other ‘we-don’t-quite-know-enough-about-this’ sweeteners

            Well….I think so. I’ve been experimenting a lot with stevia lately, and I think with the right balance and the right extras it’s possible to make a pretty yummy genuine sugar-free chocolate.

            The sugar-free chocolate recipe

            If you make a simple combo of

            • 3 T Raw cacao powder
            • 9 drops Stevia
            • Cacao butter or coconut oil (enough that it’s stirrable)

            You come up with an ‘okay’ result. The liquid stevia does make the chocolate react and start setting super-fast, so act with lightening speed. The tricks I’ve come up with to make it yummy are to add 1-2 extras to balance it out. For example I found that adding one of the following:

            • a splash of orange or peppermint oil
            • chopped activated almonds, hazelnuts or sunflower seeds
            • something crunchy and fun like puffed rice or cereal

            …gives it the balance it needs. Or maybe the extras are to distract you from the fact that there isn’t sugar. But hell, it works!
