Fluffy sweet cookies. Perfect for after dinner or with a cup of tea.
- 2 eggs
- 1 scoop vanilla protein powder (mine is 0.8g carbs)
- Zest of 1 lemon
- 2 T psyllium husk
- 75g Macadamia nuts, ground
- 25g Brazil nuts, ground
- 1 tsp baking powder
- 1 tsp ground ginger (or 1 knob fresh ginger)
- 10 drops stevia
- 2 T coconut oil
Combine all ingredients and dollop onto a baking sheet. Bake 10 minutes in a medium oven (180 C) and cool on a wire rack.
