Lemon Ginger Protein Cookies

Fluffy sweet cookies. Perfect for after dinner or with a cup of tea.

  • 2 eggs
  • 1 scoop vanilla protein powder (mine is 0.8g carbs)
  • Zest of 1 lemon
  • 2 T psyllium husk
  • 75g Macadamia nuts, ground
  • 25g Brazil nuts, ground
  • 1 tsp baking powder
  • 1 tsp ground ginger (or 1 knob fresh ginger)
  • 10 drops stevia
  • 2 T coconut oil

Combine all ingredients and dollop onto a baking sheet. Bake 10 minutes in a medium oven (180 C) and cool on a wire rack.
