            Lemon zest tricks

            I start most days with lemon juice in water, so before I squeeze the lemon, I zest it and keep the zest in a container in the freezer. It’s super handy to sprinkle on salads, in pancakes or in just about anything.

            Did you know 1 tablespoon of lemon zest contains double the amount of vitamin C and triple the amount of fibre than 1 wedge of lemon without the peel, according to the USDA database?

            There are over 60 different types of flavonoids in citrus, plant compounds that are known to exhibit antioxidant properties in humans. Many of these flavonoids have their highest concentrations within the peel. Naringin, a flavonoid found in lemon zest (though not the fruit) is a powerful antioxidant that may reduce radiation-induced damage to the cells of the body.
