I’ll be honest with you. I was a bit dubious about this recipe, but now I’m sold! This recipe is so tasty all on it’s own, but also perfect as a side dish with a protein or other vegetables.
I’m a bit suspicious of things named after a non-paleo or non-raw item that they vaguely resemble either in taste, look or both. If someone says ‘rice’ – I’m thinking about the fluffy, starchy taste of rice and when I bite into my cauliflower, it’s hard to not be a little disappointed.
I’m totally in favour of renaming ‘Cauliflower Rice’, to something else that stops my brain from thinking of the ‘ricey stuff’. Maybe…
Chop cauliflower in the food processor until it resembles rice and set aside. Chop garlic, onion and ginger and fry in 1 tsp coconut oil for 1-2 minutes until starting to brown. Add cauliflower and stir for 1 minute. Add tamari and stir through. Sprinkle over garlic powder and smoked paprika and stir through with chopped parsley before serving.
